A green ring around the yolk of a hard-boiled egg can be unappetizing, but it’s completely harmless. The discoloration usually happens when eggs are cooked too long, causing iron in the yolk to react with sulfur in the egg white and form iron sulfide.
To prevent the green ring, focus on cooking time and temperature. Bring the water to a boil, add the eggs, then simmer them for about 9 to 12 minutes, depending on their size. As soon as they’re cooked, place them in an ice bath or cold water to stop the cooking process.
Cooling the eggs quickly can also make them easier to peel. Using slightly older eggs may help with peeling as well, while hard-boiled eggs should be refrigerated if they aren’t eaten right away. With careful timing and quick cooling, you can enjoy neatly cooked eggs without the unwanted green ring.
